If we are to truly have a native culinary culture in Ireland that is vibrant and can hold its own, we need to be as proactive in buying Irish made drinks as we are in buying Irish foods.

We live in a remarkable age where producers both large and small from all round our island, are crafting exceptional spirits, beers, liqueurs, ciders and now even wines. And yet, Cask is one of the few bars in Ireland to fully embrace our rich liquid landscape.It's inspiring to see their work continuously blossom and this latest menu should be regarded as a template for what every other Irish bar can achieve if they genuinely want to celebrate and support the Irish Drinks industry. 1. ROE & CO. DISTILLERY

Roe and Co. is a whiskey we’ve fallen in love with over our three year of Diageo World Class
adventures, starting with the ‘Hunters Flip’ Cocktail. This whiskey is a blend comprising
of malt and grain whiskey. All of these have been entirely aged in ex-bourbon barrel with
a strong emphasis on first fill casks then bottled at 45% without chill filtration. This new
distillery at the former Power House of the Guinness Brewery does cracking tours and places
a big emphasis on fun, flavour and collaborative reinvention. Some of the best characters
in the Irish drinks industry work there. You’d know a few good Cork feens had infiltrated!

2. GLENDALOUGH DISTILLERY | KILLAHORA ORCHARDS

Glendalough in Wicklow is one of the most beautiful places in Ireland. It’s home to a range
of Gins that we’ve absolutely fallen in love with, the Glendalough Wild Botanical range. Wild
plants from the mountains around the distillery are foraged daily, what’s picked goes fresh
into the still within hours. All under the watchful eye of forager Geraldine Kavanagh. Their
whiskey is also pretty banging.
Killahora Orchards in Glounthaune is home to our favorite range of Irish liquids and their
products are uncomparable on this Island. From sipping on a craft cider to enjoying an Apple
iced wine post dinner they’re at the pinnacle of what’s good about Irish alcohol production,
talented, passionate and sound!

3. ORIGIN SPIRITS

In our opinion Irelands greatest vodka. Kalak is a phonetic spelling of “Cailleach”, the Irish
Celtic Goddess and Queen of Winter. Kalak was the closest thing the celts had to mother
nature. She was the embodiment of the darker, more powerful side of nature, and the side
harnessed to make Kalak.
Kalak is a true expression of Ireland’s terroir, the land, this crazy weather, and her people’s
ancient craft in a bottle. Distilled four times in a copper pot still, using Irish malted barley
and pure mountain water, this single malt vodka is then finished in American virgin oak
casks, charred over an Irish peat fire. Mellow smokiness evolves with vanilla, gingerbread
and creaminess.

4. MIDLETON MICRO DISTILLERY | POACHERS SODA

Has there ever been a greater still name? Apparently Mick was fairly rounded. We feel very
blessed to have one of the worlds great distilleries twenty minutes down the road from us
in Cask. Home to Jameson and some of the worlds finest whiskeys it’s a place we’ve made
many friends over the years.
Method and Madness Gin is the result of liquid experimentation at their Micro Distillery. This
Irish Micro Distilled Gin contains 16 eclectic botanicals led by Black Lemon and Irish Gorse
flower; giving it notes of citrus and spice with a measure of controlled chaos. Hat tip to our
pals at Poachers, home of Ireland premium tonic and soda who as ever add the fizz.

5. WEST CORK DISTILLERS

West Cork Distillery was formed in 2003 by childhood friends, John O’Connell, Ger McCarthy
and Denis McCarthy at a time when it made very little economic sense to do so. The early
years were far from glamorous, operating in a room at the back of Denis’ house in Union Hall
with two small stills they bought from a schnapps producer in Switzerland. In 2014 they
moved to their new distillery in Skibbereen. They are now the largest, independently owned
distillery in the country. Drink scientists and great craic we purposely kept this highball
simple so their whiskey could do the talking.

6. DINGLE DISTILLERY

A great tasting smooth vodka that is distilled at the Dingle Distillery in County Kerry. This
vodka comes highly acclaimed after winning Best Irish Vodka at the Irish Whiskey Awards in
2015 and 2017. The Distillery was crafted and conceived by three independent spirits: Oliver
Hughes; Liam LaHart and Peter Mosley, the people behind Porterhouse Brewing Company;
one of the pioneers of craft brewing in Ireland in 1996. Their Gin is the most requested Irish
Gin on the market, the vodka is also pretty spectacular.

7. KILLOWEN DISTILLERY / KINSALE MEAD

Killowen Distillery is our hat tip to the North and it’s tradition of world class distilling. The
creation of Brendan Carty who travelled the globe and learned the secret of distilling
premium Irish Whiskey, his Distillery is Ireland’s smallest whiskey producer. The most
authentic of distilleries, Killowen Distillery is seated in the heart of the Mournes in County
Down where horizons are framed by sweeping hills that slope gently into the sea. It is a
place where old traditions and the finest natural resources have been blended to produce
world class craft spirits. We feel his Poitín is the closest to the illegal poitin we stole from our
parents cupboard. This small batch produce includes mixes of malted and unmalted grain,
the malted being smoked on site by local Mourne turf fires in their hand made kiln.
Kinsale Mead is a refreshing drink, handcrafted in small batches in Kinsale using natural
ingredients, old recipes and modern techniques. Atlantic Dry Mead is a traditional style
mead made from Spanish orange blossom honey and fermented off dry to 12% ABV. The
world’s oldest alcoholic category.

8. BLACKS BREWERY AND DISTILLERY KINSALE

Kinsale is very dear to us in Cork and home to Ireland’s first Rum, Blacks spiced rum. Blacks
Brewery and Distillery was founded by husband and wife team Sam and Maud Black in
2013. Its portfolio contains gin, whiskey, and a variety of award-winning craft beers. Their
still is called Morrígan after the great Irish mythological queen. Kinsale, Rum and ancient
characters, what’s not to love?

9. MÍL GIN. DISTILLED IN PEARSE LYONS DISTILLERY

The Pierce Lyons distillery is possibly Ireland’s most dramatic urban distillery located in St.
James Church and part of the Liberties distillery revival. Daily tours flock in. It’s the home
of Míl Gin, a mediteranean style gin inspired by the warm golden light from the stain glass
window which depicts Camino de Santiago in North-West Spain, where tradition has it St.
James is buried. Gin makers love a good story in fairness. This Cocktail is so delicious we
put it on tap.

10. TULLAMORE DEW RUM CASK FINISH | PIKEMAKER
STOUT | LONGUEVILLE HOUSE APPLE BRANDY,

Tullamore D.E.W. XO Caribbean Rum Cask Finish is their original Triple Blend Irish whiskey
with an additional finish in first fill XO Caribbean rum casks for sweet tropical notes. Bang for
buck it’s one of the best whiskeys in the Country.
If you travel down the road 25 kms to the sleepy town of Kinnity you’ll find the Slieve Bloom
Bar. They brew a killer stout we’ve combined with Irelands finest Apple Brandy from the
legends at Longueville House in Mallow. This is a milk punch style cocktail.

11. MICIL POITÍN, MICIL HERITAGE POITÍN

Pádraic Ó Griallais, is a 6th generation poitín distiller from Connemara. His family have
been producing poitín on the shores of Galway Bay for over 170 years. This is a traditional
style poitín made in a micro-distillery in Galway city from Irish grain and flavoured lightly
with locally sourced bogbean. Micil Distillery is named in honour of his great-great-great
grandfather, Micil Mac Chearra. He began distilling in 1848 in Connemara. Beetroot forms a
bridge to the wonderful Raspberry wine from Wicklow Way Wines. It’s rare their wines don’t
feature on our Cocktail menu.
