We run a seasonal cocktail menu which changes every 12 weeks. The concept is  simple, mother nature determines which direction our drinks evolve. We forage wild ingredients and use amazing local producers to create a menu we believe is the most original and interesting in this Country.

MAD MARCH HARE POITÍN / WEST CORK DISTILLERY, CO. CORK

Poitín has been going through a serious revival of late with brands like Bán, Micil and the base for this cocktail,
Mad March Hare leading the way. Poitin dates back to at least the 6th century, an ancient farm based spirit
that’s made in a single pot still, and takes its name for the Irish word for ‘little pot’ . Mad March Hare is part of
the Intrepid Spirit portfolio as is Los Javis Mezcal. They work beautifully together in this cocktail, two categories
combining to form a complex combination of Irish-Mexican imbibing royalty. Established in 2013, Mad March
Hare is triple distilled from a mashbill of 100% malted barley in copper pot stills at West Cork Distillery, and is
bottled at 40% ABV. Voted Ireland’s Best Poitin by The Irish Whiskey Awards in 2019.

DUNVILLS PEATED IRISH WHISKEY / ECHLINVILLE DISTILLERY,CO. DOWN

The Echlinville Distillery in Co. Down is a hugely respected player in Irelands spirits renaissance. Nestled among
the rolling drumlins of the Ards Peninsula, Echlinville became the first new distillery in Northern Ireland for
more than 125 years when it received its license and casked its first spirit on the 5th of August 2013. Echlinville
has since established itself at the forefront of Ireland’s burgeoning spirits industry and is home to some of the
country’s best-known and respected brands including Dunville’s Irish Whiskey. A genuine farm distillery, all
Echlinville’s new make spirits are distilled from barley that’s grown, harvested and floor malted on their distillery
farm near the shores of Strangford Lough.

AN DÚLAMÁN IRISH MARITIME GIN / SLIABH LIAG DISTILLERY,CO. DONEGAL

An Dúlamán Irish Maritime Gin is the first gin distilled in Co. Donegal and has been described as a love letter
to the Donegal coast. The coast around Sliabh Liag holds an extraordinary bounty for seaweed foragers with
their centuries-old knowledge of harvesting and harnessing the qualities of these natural products. It has at its
heart, five locally harvested seaweeds, giving a rich umami complexity, perfectly balanced with bright juniper
and gentle warming spice. An Dúlamán is distilled in tiny bat in a 500lt copper pot still, lovingly named Méabh
(she who intoxicates), the gin is hand bottled, wax sealed and left to age until the process is repeated

BUSHMILLS DISTILLERY, CO. ANTRIM

Granted a license to distill in 1608, Bushmills is the oldest licensed whiskey distillery in the world. The 10 year
is the “youngest” of the Bushmills single malts. It’s triple distilled from 100% malted barley and matured for a
minimum of 10 years in former sherry casks and bourbon-seasoned casks which gives it its honey, vanilla and
milk chocolate aroma. Its exceptional complexity is only matched by its approachability, its smoothness. This is
the personal favorite of master blender Helen Mulholland who we named the drink after. Helen was recently
inducted into the Whisky Magazine Hall of fame, the first woman in 25 years.

MAHARANI GIN / REBEL DISTILLERY, CO. CORK

Rebel City distillery is the first distillery in Cork City in nearly 50 years and for us in Cask it’s so exciting to
have our first of many collaborations with them. Founded this year by Robert Barrett from Cork and his wife
Bhagya who is from Kerala in India. The Distillery is situated in Cork’s Docklands, and will produce a range of
premium spirits which draw inspiration from around the world. The site was the former Henry Ford & Sons
factory and it was the industrial hub of Cork City, hence the Cocktail name. Rebel City Distillery has chosen
this historic space for its home, drawing on the innovations of the past to inspire the creations of the future.
Maharani Gin is their first spirit.

KILLOWEN RUM – KILLOWEN DISTILLERY, CO DOWN

Killowen Distillery is the creation of Brendan Carty who travelled the globe and learned the secret of distilling.
It is Ireland’s smallest (legal) distillery and it’s seated in the heart of the Mourne mountains in Co. Down where
horizons are framed by sweeping hills that slope gently into the sea. The rum is made using the time-honoured
Spanish method for blending sherry, the Solera system. Three cask types are stacked one on top of each other
with rum moving from the top to the bottom adding complexity & flavour at each stage of the journey. The
oldest spirit is removed from the bottom barrel & bottled before topping up the cask with the next-oldest spirit
from the cask above. This goes on and on until finally the cask at the top is refilled with new rum spirit. The
barrels are then left to age until the process is repeated.

BALLYKEEFE VODKA, BALLYKEEFE DISTILLERY, CO. KILKENNY

Ballykeefe Distillery is proudly owned and managed by the Ging Family, who trace their unbroken farming
lineage as far back as written records exist. Morgan’s fascination with the shared history of Irish farming and
Irish Whiskey, led him to dream of one day diversifying his farming enterprise with the addition of a distillery
as was so common centuries ago. It took 25 years of research and painstaking effort to bring his dream to
fruition. He was meticulous in his vision to build a distillery which would be a worthy modern day descendant
of the glorious history of Irish Whiskey. Therefore, with sustainability and protecting the environment central
to his planning, no expense was spared to achieve the highest quality standards in every aspect of the distilling
operation.

TEELING POT STILL, TEELING DISTILLERY, CO. DUBLIN

The Teeling Whiskey Distillery was the first new distillery in Dublin for over 125 years. Opened in 2015 and
situated just a stone’s throw from their ancestral distillery, right in the heart of the Golden Triangle, the historic
distilling district of the city. Loved by bartenders as well as whiskey connoisseurs they produce a series of
whiskeys which are non chill filtered prior to bottling, leaving as much of the body, character and richness in
the bottle. They bring their Whiskey from cask strength to its signature ABV of 46%. The pot still used in our
cocktail is the first Whiskey to be distilled in Dublin in nearly 50 years. Their Single Pot Still pays homage to
a Dublin style made famous by the old, now closed, Dublin Whiskey Distilleries. It’s crafted using a uniquely
Irish mash bill consisting of 50% malted and 50% unmalted barley that has been triple distilled and matured in
a combination of American Virgin Oak, Bourbon, and Sherry casks.

CONNEMARA PEATED IRISH WHISKEY, COOLEY DISTILLERY,CO. LOUTH

This is whiskey we have had a long relationship with going back to our first cocktail menu. Unique among Irish
whiskeys, Connemara is the only Irish Peated Single Malt Whiskey widely available today. Inspired by the 18th
century art of drying malting barley over peat fires, Connemara possesses a distinct peaty flavour and aroma,
instilling a delicate smokiness and smooth, sweet taste. Its complex peat flavours and smooth, sweet malt taste
make it a truly unique Irish whiskey. It’s highly decorated receiving over 20 medals in major spirits competitions
since 2012. It’s distilled at the Cooley Distillery in Co. Louth.

BLACKWATER VODKA, BLACKWATER DISTILLERY, CO. WATERFORD

Blackwater Distillery is situated on the banks of the Blackwater River, in the village of Ballyduff Upper in
beautiful West Waterford. Established in 2014, they craft a range of spirits including award-winning gins, vodka
and traditional pot still Irish whisky. Their Vodka is distilled in Sally, their copper pot still and they never make
more than 300 litres at a time. Now that’s genuine small batch. After distillation, all they add is soft Waterford
water, giving their vodka its wonderfully smooth character. If you find yourself in Waterford, check out their
distillery located in a refurbished 1950s hardware store in Ballyduff village, on the banks of the Blackwater River.

BERTHAS REVENGE, BALLYVOLANE HOUSE SPIRITS, CO. CORK

Ballyvolane House Spirits Company formed in May 2015 and is the brain child of mates Justin Green and
Antony Jackson. Born out of a shared passion for food and drink, coupled with many years spent in the world of
catering, hospitality, marketing, and wine, they decided it was a good time to come together and become active
players in the wonderful world of small-batch distilling.
The result is a privately-owned, passionately-run little business based on the grounds of the stunning rural idyll
that is Ballyvolane House near Castlelyons in Co. Cork. Their gin, Berthas Revenge, is named after the world
famous cow and uses whey alcohol from the local dairy farmers in Cork, together with their own natural well
water and an interesting mix of locally foraged and grown botanicals.

LONGUEVILLE HOUSE APPLE BRANDY, LONGUEVILLE HOUSE DISTILLERY, CO. CORK

Longueville House Distillery was Ireland’s first micro distillery (est 1985) and Ireland’s fourth distillery to gain a
licence for distilling spirits.
Their Brandy is a double distillation (ABV 40%) of their own cider. The distillery uses the Republic of Ireland’s only
flame fed antique copper pot stills and worm tub coil condensers. Once the cider is fermented, resulting in a rich
amber colour, it is poured into pot stills where it is double distilled into an apple brandy.
The Brandy is stored in French oak barrels, where it is aged for between four and six years to mature. During the
maturing process, the brandy draws out the tannins, vanilla, oak and smokiness from the oak wood. The Brandy
is then cold filtered (non chill filtered) and bottled by hand. The resulting brandy is rich with the aroma of apples,
smooth and full bodied on the palate. It’s works exceptionally in cocktails or simply neat.
