This is not a traditional cocktail menu. Across sixteen drinks, we have collaborated with people who are quietly reshaping how we interact with the land. The seed savers, the coastal foragers, the farmers, and the producers.
Each drink is inspired by those who choose to work in deeper relationship with the land. From the regenerative soils of Monaghan farms to the salt crusted shores of Achill Island, every ingredient has been chosen because it refuses to conform. Industrial food systems demand uniformity, this menu demands the opposite. It celebrates the unpredictability of wild fermentation, the slow alchemy of plants, and the quiet patience of a growing forest. To drink from this menu is to accept a little anarchy. It is a rejection of the conventional and the mass produced, in favour of what is painstakingly slow, deeply local, and unapologetically wild.
